When I need comfort food, this is what I make. It is probably really bad for me physically, but when downed with a cup of sweet tea or a bottle of Polish beer, it cures my soul. I taught this to my friend Lendsey, who had by then already shared many wonderful recipes with me, and he called me up sputtering, unable to describe how happy this dish made him.


Ingredients:

cooked kluski

a lot of onions, sliced thinly

bacon (good quality), diced

olive oil

kosher salt


Directions:

  1. 1.Make kluski and let cool. (Click here to see how.) It’s fine to use kluski that’s been in the frig for a day or two. Slice the kluski into pieces that are about 1/4 inch thick.

  2. 2.Put the diced bacon in a heavy skillet, and cook it until it is about halfway to crisp.

  3. 3.Add about 2 tablespoons of olive oil, get it hot, and add the onions. Cook the bacon and onions, stirring occasionally, until they are browned nicely. (I like the onions really browned, so that some are downright crispy.)

  4. 4.Add about 1 tablespoon more oil, and add the sliced kluski. Cook it all, stirring occasionally, until the kluski is golden brown.

  5. 5.Salt with more salt than my mother would approve of.

  6. 6.Seriously, enjoy this with either sweet black tea or with a Polish beer.
